Pork noodles with black bean sauce, chilli oil and vegetables
(You can make this recipe and add whatever meat or vegetables you like - e.g. chicken or beef also work great but add a little cornflour to the marinade to keep the meat tender when it's fried)
Ingredients:
1 pack of minced pork
4 tablespoons of Happy Eating House Black Bean Cooking Sauce
5-6 teaspoons of Happy Eating House Chiu Chow Chilli Oil
3 tablespoons shaohsing rice wine
2 teaspoons of sesame oil
3-4 cloves of garlic, crushed
Handful of mushrooms, chopped
2 courgettes, sliced
Handful of cashew nuts
2 spring onions, chopped

Method:
In a bowl, marinade the pork, black bean sauce, 3 teaspoons of chilli oil, 3/4 of the spring onions, shaohsing rice wine, sesame oil and garlic, mix well and leave to the side. Chop the courgettes and mushroom. In a wok, fry a teaspoon of the chilli oil and add the pork marinade and stir, until the pork is cooked. Add the mushrooms and courgettes and cook with the pork - add a little boiling water if you want a little more of a sauce. Boil the noodles, drain, and stir 1-2 teaspoons of chilli oil (make sure you get lots of flakes!) then add the pork and vegetables and sprinkle the cashews on top. Easy!
