Spicy mango salad recipe
(This recipe was originally made with the limited edition Happy Eating House Sichuan Chilli Oil but works perfectly with Chiu Chow Chilli Oil too!)
Ingredients:
2 medium mangoes, peeled and stones removed
2 tablespoons lime juice
2 tablespoons Happy Eating House Chiu Chow Chilli Oil
2 spring onions chopped finely
(Optional) 2 tablespoons chopped coriander
Salt and Pepper to taste
Method:
Chop up the mangoes into cubes and place in a bowl. In a separate bowl mix together the lime juice and chilli oil (make sure you get lots of chilli flakes!), then stir into the mango. Add the spring onions and coriander and season with salt and pepper to your taste.
