Vegan fried tofu salad with chilli oil
Ingredients:
1 pack of firm tofu (or as much as you want), cubed
A few tablespoons of plain flour
Salt and pepper
Salad leaves
Handful of cashew nuts, chopped
A few teaspoons of Happy Eating House Chiu Chow Chilli Oil
Oil (to fry the tofu in)
1 pepper, sliced
1 peach or nectarine, sliced
A handful of cherry tomatoes, sliced in half
Method:
Drain the tofu and cut into cubes. Mix the flour with salt and pepper, and dip the cubes into the flour mix and coat on all sides. Heat a layer of oil in a small frying pan until very hot, then add the tofu cubes and cook until golden on each side. Once the tofu is done, remove from the pan and place on kitchen roll to soak up excess oil. Slice the tomatoes and pepper, and in a separate pan add a little chilli oil and lightly fry the vegetables, you can also add the cashew nuts so they roast a little. Chop the peach/nectarine and add to the salad leaves, then add the vegetables, cashews and fried tofu and drizzle with the rest of the chilli oil (make sure you get some of the flakes), yum!
