Vegetable omelette with Chiu Chow Chilli Oil recipe


Ingredients:

2 eggs
1/2 a pepper, sliced 
Handful of cherry tomatoes, sliced in half
2 teaspoons of Happy Eating House Chiu Chow Chilli Oil
(Optional) 1 spring onion
Salt and pepper 

Method: 

Whisk the eggs, spring onions and salt and pepper with a fork. In a frying pan, heat a teaspoon of the chilli oil. Add the peppers and tomatoes to the pan and gently fry until they soften. Add the eggs and fry until crisp on the bottom, then flip the omelette over and fry on the other side and serve with another drizzle of the chilli oil on top!
